Ice Cream Cake

Ingredients
- 240 ml (1 cup) All-purpose flour
- 240 ml (1 cup) sugar
- 2 teaspoons baking powder
- 240 ml (1 cup) skim milk
- 4 large eggs
- 1 teaspoon vanilla
- 120 ml (1/2 cup) vegetable oil
- 3 scoops of Vanilla Ice Cream
- 120 ml (1/2 cup) of sliced, fresh strawberries
Directions

Preheat oven to 180°C (360°F).

In a large bowl, whisk together flour, sugar, and baking powder.

Add in milk, eggs, vanilla, and oil, whisking until just combined.

Grease a 9-inch round cake pan with cooking spray, then pour batter into pan.

Bake for 25-30 minutes until golden brown, and a tester inserted comes out clean.

Allow cake to cool completely before slicing in half.

Place one half of the cake onto a parchment lined baking sheet.

Scoop 3 scoops of ice cream onto the top of the cake half.

Pop that half of the cake and ice cream into the freezer for 10 minutes.

Carefully place second cake half on top of the ice cream and press down lightly.

Cover entire cake with plastic wrap and freeze for 25 minutes.

Meanwhile, slice the strawberries into thin rounds.

Once the cake has frozen, spread the fresh strawberries over the top.

Slice and serve your delicious Ice Cream Cake for a cool summer treat!
