Ingredients
- Vegetables
- 2 large tomatoes, diced
- 1 large cucumber, diced
- 1 red onion, diced
- 1 red bell pepper, diced
- 1/2 cup kalamata olives
- Salad Dressing
- 1/4 cup olive oil
- 1/3 cup red wine vinegar
- 2 tablespoons freshly squeezed lemon juice
- 2 teaspoons sumac
- 1 garlic clove, finely minced
- Freshly ground black pepper to taste
- Garnish
- 1/4 cup loosely packed fresh parsley leaves, chopped
- 1/4 cup crumbled feta cheese
Directions
- Prepare the Vegetables:
- To prepare the tomatoes, slice them in half and remove the core. Dice the tomato into small cubes.
- Peel the cucumber and slice it in half lengthwise. Remove the seeds and discard. Dice the cucumber into small cubes.
- Peel the red onion and cut it into quarters. Thinly slice the red onion.
- Wash the bell pepper and remove the stem and seeds. Dice the bell pepper into small cubes.
- Pit the olives and cut them into quarters.
- Make the Dressing:
- In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, sumac, garlic and pepper.
- Assemble Salad:
- In a large bowl, combine the tomatoes, cucumber, red onion, bell pepper and olives.
- Add the dressing and toss gently until everything is combined.
- Sprinkle the parsley and feta cheese on top.
- Serve the salad immediately.
Recommended Sides
This Greek salad is best served with a crusty piece of bread. You can also add grilled chicken or pita chips for extra protein. For extra flavor, top with a sprinkle of oregano.
