Ingredients
- 1 cup brown rice, rinsed
- 1 cup frozen peas, defrosted
- 1/2 cup diced carrot
- 1/2 cup diced zucchini
- 1/4 cup diced onion
- 2 tablespoons olive oil
Directions
- Fill a medium-sized pot with 2.5 cups of water.
- Place the pot on the stove and turn the heat to medium-high.
- Once the water starts boiling, add the 1 cup of brown rice and reduce the heat to low.
- Simmer the rice for 15 minutes or until the water is fully absorbed.
- In the meantime, finely dice the carrot, zucchini, and onion.
- Heat the oil in a large skillet over medium-high heat.
- Add the diced vegetables to the skillet and sauté for 5 minutes or until vegetables are tender.
- Add the defrosted peas and cook for an additional 2 minutes.
- Remove the skillet from the heat and set aside.
- When the rice is done, fluff with a fork and add to the skillet with the vegetables.
- Toss to combine then serve.
