Hing Kachori

Ingredients
- 4 cups wheat flour
- 1 teaspoon hing (asafoetida)
- 2 tablespoons oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon chili powder
- 1 teaspoon garam masala
- 2 tablespoons sesame seeds
- 2 teaspoons kasoori methi or fenugreek leaves
- 1 teaspoon baking powder
- Water, as needed
- Oil, for frying
Directions
- In a large bowl, mix the wheat flour, hing, oil, cumin, coriander, chili powder, garlic and garam masala together.
- Add the sesame seeds, kasoori methi or fenugreek leaves, and baking powder to the bowl and mix until everything is well-combined.
- Gradually add water to the mixture until the dough forms and can be kneaded into a soft ball.
- Kneed the dough for 5 minutes, then cover it and set it aside for at least 15 minutes.
- Roll the dough into a long rope-like shape, then cut it into small balls.
- Flatten each ball slightly and place them on a floured surface.
- Roll out the flattened dough into a thin circle and set aside.
- Heat oil in a deep-fryer or pot to 350 degrees Fahrenheit (176 degrees Celsius).
- Place the kachoris in the hot oil and fry them until they are golden brown.
- Remove the kachoris from the oil and serve warm.
