Ingredients:
- 3 Tomatoes
- 1 Red pepper
- 1 Onion
- 1 Garlic clove
- 1 Cucumber
- 2 tablespoons Extra Virgin Olive Oil
- 2 tablespoons of Sherry Vinegar
- ½ teaspoon of Ground Pepper
- 2 Slices of stale white bread
Directions:
- Start off by gathering all of your ingredients. (Funny joke: They may be all in the same bunch, or you may have to go searching for them! )
- Wash the tomatoes, red pepper, onion, garlic, and cucumber.
- Cut the tomatoes into quarters.
- Cut the cucumber into slices about 1 centimeter thick.
- Peel and mince the garlic.
- Peel and chop the onion into small cubes.
- Peel the red pepper seeds and cut into small cubes.
- Place the tomatoes, cucumber, garlic, onion, and pepper in a bowl. Mix.
- Add the olive oil, sherry vinegar, and ground pepper to the bowl and mix.
- Cut the slices of bread into small pieces.
- Place the bowl with the vegetables in a blender and mix until all of the ingredients are blended together for about 5-7 minutes.
- Serve the Gaspacho in a bowl and add the pieces of bread on top.
