Ingredients
- 1 carrot, peeled and sliced
- 1 potato, peeled and diced
- 1/2 onion, sliced
- 1/2 block of firm tofu, cubed
- 1/2 cup of shiitake mushrooms, sliced
- 4 cups of water
- 1 tablespoon of soy sauce
- 1 tablespoon of mirin (optional)
- 1 tablespoon of sesame oil
- A handful of spinach, chopped
Directions
- In a large pot, add the water and bring it to a boil over medium heat.
- Add the sliced carrot, diced potato, and sliced onion to the pot. Let it simmer for about 10 minutes until the vegetables are tender.
- Add the cubed tofu, sliced shiitake mushrooms, soy sauce, and mirin to the pot. Let it simmer for another 5 minutes.
- Lastly, add the chopped spinach and sesame oil to the pot. Stir well and let it simmer for an additional 2-3 minutes.
- Serve the Kenchinjiru hot in bowls. Enjoy!
