Flamiche aux poireaux

Ingredients
- 2 Poireaux (about 270 g), sliced
- 2 tablespoons of flour
- 2 tablespoons of olive oil
- 300 ml of vegetable stock
- 2 tablespoons of butter
- 1 onion, finely chopped
- 200 g of white cheese, grated
- 2 eggs
- Pepper
Directions
- Preheat an oven to 400°F (200°C).
- In a bowl, mix together the flour and olive oil.
- Heat the vegetable stock in a saucepan over medium-high heat until it starts to simmer.
- In another saucepan, melt the butter and add the onion. Fry for 1 minute, stirring often.
- Add the flour and olive oil mixture and cook for 2 minutes, stirring constantly.
- Add the simmered vegetable stock and cook for 5 minutes, stirring occasionally.
- Remove from the heat and add the cheese, stirring until melted and the sauce has thickened.
- Grease a large baking dish with butter.
- Arrange the sliced poireaux in the dish and pour the cheese sauce over it.
- Bake for 20 minutes, until golden brown.
- Meanwhile, in a bowl, whisk together the eggs and a pinch of pepper.
- When the flamiche is ready, remove from the oven and pour the eggs over it.
- Bake for a further 10 minutes until the eggs are cooked.
- Serve warm with your favorite sides.
