Ingredients
- 2 medium eggplants, chopped into 1-cm cubes
- 1 red onion, chopped
- 1 red pepper, chopped
- 2 cloves of garlic, minced
- 400g can of chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 2 tablespoons tomato puree
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 2 teaspoons paprika
- Salt and pepper to taste
- 200g feta cheese, crumbled
Directions

Preheat oven to 200°C.

Spread the chopped eggplant, onion and red pepper in an even layer on a baking sheet and sprinkle with olive oil, salt and pepper. Roast the vegetables for 30 minutes, stirring every 10 minutes to ensure even cooking.

Meanwhile, heat a large saucepan over medium-high heat and add 1 tablespoon of olive oil. Add the garlic and sauté until fragrant.

Add the tomato puree, oregano, cumin, paprika and a pinch of salt and pepper. Sauté for 1-2 minutes.

Add the chickpeas and stir to combine. Cook for 5 minutes.

Once the vegetables are roasted, add them to the saucepan with the chickpeas and stir to combine. Simmer for 5 minutes.

Transfer the Fara to a serving dish and top with the crumbled feta cheese.
