Ingredients
- 4 egg yolks
- 3 tablespoons of honey
- 250 mL of double (heavy) cream
- ½ teaspoon of vanilla extract
- 1 teaspoon of green tea leaves
- 2 tablespoons of Demerara or brown sugar
- 2 tablespoons of granulated sugar

Preheat your oven to 150°C (or 300°F).

In a medium-sized bowl, whisk together the egg yolks, honey, cream, and vanilla extract until the mixture is smooth.

Place the green tea leaves in a small bowl and pour the cream mixture over them. Stir everything together.

Place the mixture in two ramekins and place them in a baking tray.

Fill the baking tray with hot water until it reaches halfway up the side of the ramekins.

Place the tray in the preheated oven and bake for 45 minutes.

Remove the tray from the oven and set aside to cool.

Once cooled, sprinkle each ramekin with Demerara or brown sugar and sprinkle with granulated sugar.

Put the ramekins under the broiler until the sugar is melted and caramelized. This should take 2 to 3 minutes.
