Ingredients
- 2 skinless, boneless chicken breasts fillets
- 2 bell peppers, seeds removed and sliced
- 1 medium red onion, peeled and sliced
- 1 teaspoon of cumin
- 1 teaspoon of garlic powder
- 2 tablespoons of extra-virgin olive oil
- 1 lime, cut in half
- 8 8-inch flour tortillas
- Optional: guacamole, sour cream, and salsa for toppings
Directions
- Preheat the oven to 425°F.
- Cut the chicken into thin strips about 1/4 inch thick.
- Place the chicken strips in a medium bowl and season with cumin, garlic powder, and a pinch of salt.
- Drizzle the chicken with 1 tablespoon of olive oil and mix everything together.
- Arrange the chicken strips on a baking sheet and bake for 10 minutes, or until cooked through.
- While the chicken is cooking, heat the remaining olive oil in a large skillet over medium heat.
- Add the bell peppers and onion to the skillet and season with a pinch of salt.
- Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
- Take the chicken out of the oven and turn off the heat.
- Add the chicken strips to the skillet with the vegetables and stir until everything is combined.
- Squeeze the juice from half a lime over the fajita filling.
- To assemble the fajita: Place a handful of fajita filling onto a tortilla and top with guacamole, sour cream, and salsa, if desired.
- When cool enough to handle, roll up the fajita and enjoy!
