Chicken Fajitas

Ingredients
- 4 boneless, skinless chicken breasts (500g)
- 2 bell peppers, one red and one green, sliced into strips (200g)
- 1 large onion, sliced into strips (150g)
- 2 large garlic cloves, minced (8g)
- 2 tablespoons olive oil (30g)
- 1 teaspoon of cumin powder (2g)
- 2 teaspoons of paprika (4g)
- 4 tablespoons of freshly – squeezed lime juice (60g)
- 12 handmade flour tortillas (480g)
- 2 avocados, thinly sliced

Preheat oven to 180° Celsius (350° Fahrenheit).

Place chicken breasts on a lined baking sheet. In a small bowl, mix cumin, paprika, olive oil, and 1 tablespoon of the lime juice. Brush the chicken with the mixture. Bake for 20 minutes, until the chicken is cooked through.

While the chicken is cooking, heat a large skillet over medium heat. Add the bell peppers, onion, and garlic to the skillet and sauté for 7-8 minutes, stirring often, until vegetables are lightly browned and tender.

Remove the chicken from the oven and let sit for 5 minutes. Meanwhile, warm the tortillas in the oven for a few minutes.

Cut the chicken into thin strips and add to the skillet with the vegetables. Stir in the remaining lime juice and cook for 1-2 minutes.

Serve the chicken fajitas with the warm tortillas, avocado slices, and any desired toppings.
