Eggplant and Tomato Stew

Ingredients
- 250g eggplant
- 2 tablespoons of olive oil
- 1 small onion, chopped
- 2 cloves of garlic, minced
- 4 large ripe tomatoes, peeled and coarsely chopped
- Freshly ground black pepper, to taste
Directions
- Let’s get the veggies prepared! Grease a medium saucepan with 1 tablespoon of olive oil and heat over medium heat.
- Now grab the eggplant and cut off the ends (No more eggplant heads!). Cut into 1.5 cm cubes and add to the saucepan.
- Now take that small onion and chop it into small pieces (They won’t know its an onion if they’re chopped small enough!).
- Now add the other tablespoon of olive oil to the saucepan and add the onions, cooking for a few minutes until they are soft.
- Alright, time to add the garlic! Or in cooking terms garliccloves_choppedfinely_asroseyou_beplease. Mince 2 cloves and add to the onions.
- Don’t forget about the tomatoes! Peel and coarsely chop 4 large tomatoes and add to the saucepan.
- Season with freshly ground black pepper and mix all the ingredients together.
- Let the stew simmer for 25-30 minutes over low heat until eggplants and tomatoes are soft. Stir occasionally to make sure the stew is not sticking to the pan.
