Ingredients
- 2 tablespoons of canola oil
- 2 cloves of garlic, minced
- 2 cups of chicken broth
- 2 tablespoons of soy sauce
- 100g of cooked chicken, shredded
- 2 tablespoons of miso paste
- 2 tablespoons of mirin
- 1 teaspoon of sesame oil
- 2 spring onions, finely chopped
- 2 large eggs

Heat two tablespoons of canola oil in a large saucepan. Once hot, add the two minced cloves of garlic and sauté until fragrant.

Add in two cups of chicken broth, two tablespoons of soy sauce, two tablespoons of miso paste, two tablespoons of mirin, and a teaspoon of sesame oil. Give the ingredients a whisk to combine before turning the heat up and bringing the mixture to a boil.

Lower the heat and add one hundred grams of cooked chicken, shredded. Simmer until the chicken is cooked through and the broth has slightly thickened.

Crack two eggs into the soup and allow to poach until the egg whites turn opaque.

Garnish with chopped spring onions and serve.
