Ingredients
- 4 small eggplants
- 200g minced meat (chicken or lamb)
- 1 onion, finely chopped
- 1 tomato, chopped
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala
- Fresh coriander leaves, chopped
- 1 tbsp vegetable oil
Directions
- Start by washing the eggplants and cutting off the tops. Make 4 slits lengthwise in each eggplant, being careful not to cut all the way through.
- In a pan, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
- Add the minced meat to the pan and cook until browned. Add the ginger paste, garlic paste, cumin powder, coriander powder, turmeric powder, and garam masala. Cook for another 2 minutes.
- Stuff the meat mixture into the slits of the eggplants.
- Place the stuffed eggplants in the pan with any remaining meat mixture. Add the chopped tomato and a little water. Cover and cook for 20 minutes, or until the eggplants are tender.
- Garnish with fresh coriander leaves before serving.
