Ingredients
- 1 cup Egyptian cracked wheat
- 1.5 tablespoons Tahini
- 4 cups boiling water (950 ml)
- 2 tablespoons vegetable oil
- 1/2 teaspoon ground cumin
- 2 cloves garlic, minced
- 2 tablespoons parsley, chopped
- 2 cups tomato, diced
- 4 boneless chicken breasts
- Salt and pepper to taste
Directions

Preheat oven to 400°F (200°C).

In a large bowl, add Egyptian cracked wheat and Tahini together and mix.

Add the boiling water and stir to combine. Cover the bowl with a kitchen towel and let sit for 10 minutes.

In a large skillet, heat the vegetable oil over medium heat. Add the cumin and the minced garlic and cook for 1 minute.

Add the parsley and diced tomatoes to the skillet. Cook for an additional 2 minutes.

Add the chicken breasts and season with salt and pepper, cooking for about 8 minutes or until the chicken is cooked through.

In an oven-proof bake dish, spoon the sliced tomatoes and the chicken breasts into the bottom of the dish.

Cover the chicken and tomatoes with the cracked wheat mixture.

Bake in preheated oven for 25 minutes.
