Ingredients
- ⅔ cup of olive oil
- 60 phyllo pastry sheets
- 1 ½ cup of finely chopped, unsalted, shelled pistachios
- 2 tablespoons of honey
Directions

Preheat your oven to 350F (or 175C).

Heat the olive oil in a small saucepan on low heat.

Grease a 9x13 inch baking pan.

Place 5 to 6 phyllo sheets on the bottom of the pan, brushing each one with the warm olive oil.

Spread ½ cup of pistachios over the sheets.

Place another 5 to 6 sheets of phyllo on top, brushing each one with the oil.

Repeat layers of Phyllo and pistachios until reaching the top of the pan.

Use a sharp knife to cut the baklava into small squares.

Bake in the preheated oven for about 35 minutes, until golden brown.

Drizzle honey over the baklava and let cool before serving.
