Ingredients
- 240 ml dry Riesling
- 2 cloves garlic, finely chopped
- 1/2 teaspoon ground nutmeg
- 8 boneless, skinless chicken thighs
- 30 g butter
- 1 onion, sliced
- 4 fresh tomatoes, diced
- 2 tablespoons olive oil
- 250 ml chicken broth
- 2 tablespoons chopped fresh flat-leaf parsley
- Salt and freshly ground black pepper, to taste
Directions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine the Riesling, garlic and nutmeg. Place chicken thighs into the mixture and marinate in the refrigerator for at least 1 hour.
- Heat butter in a large oven proof skillet over medium heat. Add onion and cook, stirring occasionally, until soft and fragrant, about 5 minutes.
- Add marinated chicken and tomato to the skillet, and cook until chicken is lightly browned, about 10 minutes.
- Add the olive oil and chicken broth to the skillet and bring to a simmer.
- Remove skillet from heat and add parsley. Season with salt and pepper, to taste.
- Place skillet into oven and bake for 20-25 minutes, or until chicken is cooked through.
