Ingredients
- 2 cups cooked black beans
- 1 small onion, finely diced
- 1/2 green bell pepper, finely diced
- 2 cloves garlic, minced
- 2 cups cooked white or brown rice
- ½ cup frozen corn (optional)
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 2 teaspoons cumin
- 2 tablespoons tomato paste
- 4 flour tortillas
- Shredded cheese (optional)
- ½ cup salsa (optional)
Directions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat oil over medium heat.
- Add onions and bell peppers and cook for about 5 minutes or until tender.
- Add garlic and cook for 1 minute.
- Add black beans, tomato paste, chili powder and cumin and cook for 2 to 3 minutes until combined.
- Add cooked rice and corn and cook for an additional 5 minutes.
- Divide black bean and rice mixture among four tortillas.
- Top with cheese (optional) and roll up the tortilla tight and place in a baking dish.
- Bake in preheated oven for 20 minutes or until golden brown.
- Serve with a side of salsa (optional).
