Ingredients
- 300g (10.6oz) ripe tomatoes, cored and finely diced
- 2 cloves garlic, peeled and finely diced
- 1 onion, peeled and finely shredded
- 8g (0.3oz) sweet paprika
- 25g (0.9oz) butter
- 200ml (7.07floz) vegetable stock
- 2 tablespoons of olive oil
- a few fresh basil leaves (optional)
Directions
- Heat the olive oil in a large saucepan over medium heat.
- Once hot, add the diced garlic, onion, and paprika and heavy with a pinch of salt. Joke: ** Guy 1: **What did the saucepan say to the pan? Guy2: I’m so heated!
- Stir and sauté for 3-4 minutes, or until the onion has softened.
- Add the diced tomato and 10-12 turns of fresh ground black pepper.
- Reduce the heat to low and continue to cook for 5 minutes, stirring occasionally.
- Add the butter and stir until melted.
- Increase the heat to medium and stir in the vegetable stock.
- Simmer for 10 minutes or until the liquid has reduced and the sauce begins to thicken.
- Taste and adjust seasoning if necessary.
- Remove the saucepan from the heat and transfer the velouté to a blender.
- Blend on low speed for 30-45 seconds or until you have a smooth consistency.
- Serve with chopped basil leaves sprinkled on top and a side of your favorite vegetables.
