Ingredients
- 8 small sized tortillas
- 1 can of canned refried beans
- 1 teaspoon of chili powder
- 1/4 teaspoon of ground cumin
- 1/4 teaspoon of garlic powder
- 1/4 teaspoon of oregano
- 1/4 teaspoon of paprika
- 1/4 cup of cheddar cheese, grated
- 1/2 cup of red onion, chopped
- 1 medium sized tomato, diced
- 1/4 cup of fresh cilantro, chopped
- 1/4 cup of diced avocado (optional)
Directions
- Preheat the oven to 400F.
- Wrap the tortillas in a damp paper towel and microwave on high for 45-60 seconds.
- In a medium size bowl, stir together the refried beans, chili powder, ground cumin, garlic powder, oregano, and paprika.
- Spread the mixture evenly over the tortillas and top with the grated cheese, red onion, diced tomatoes, and fresh cilantro.
- Place the tacos on a baking sheet and bake for 15 minutes until the cheese is melted and bubbly.
- Serve with a side of guacamole (optional) or diced avocado.
