Brandade de Morue

Ingredients
- 3⁄4 cup of iodized salt, plus 2 teaspoons
- 2 pounds of white, skinless boneless cod
- 2 large potatoes, peeled and cubed
- 1 medium onion, diced
- 3 cloves of garlic, minced
- 2 tablespoons of extra-virgin olive oil
- 1⁄3 cup of whole milk
- Optional: 1 lemon, zested
Directions

Dissolve 3⁄4 cup of salt into 4 cups of water in a large pot. Add the cod and let it sit in the brine for about 30 minutes.

Boil a pot of water and add the cubed potatoes. Boil for about 12-15 minutes, or until fork-tender. Strain and set aside.

Preheat oven to 425°F/220°C.

Heat the olive oil in a skillet over medium-high heat. Add the onion and garlic and cook, stirring frequently, until golden, about 5 minutes.

In a large bowl, mix together the cooked potatoes and sautéed onion and garlic. Mash the mixture with a potato masher.

Drain the cod and flake into the potato mixture. Add the remaining salt and the milk and mix until smooth.

Grease an oven-safe dish with the remaining olive oil. Then scoop the brandade de morue mixture into the dish. Top with the lemon zest, if using.

Bake for about 25 minutes until golden brown.

Let cool for 5 minutes before serving.
