- 2 cups long grain white rice
- 4 tablespoons olive oil
- 2 cloves of garlic, minced
- 1 teaspoon cumin seeds
- 2 medium onions, diced
- 1 green bell pepper, diced
- 2 cups of cauliflower, small florets
- 2 tablespoons curry powder
- 1 teaspoon garam masala
- 1 teaspoon turmeric
- 1 teaspoon chili powder
- 1 1/2 cup vegetable broth
- 2 tablespoons fresh cilantro, chopped
Directions

Start by washing the long grain white rice in a large strainer or bowl. Beware of the white monsters in the sink trying to steal your rice!

In a large pot, heat the olive oil over medium heat.

Add the minced garlic and cumin seeds to the pot and cook for 30 seconds.

Add the diced onions, bell pepper, and cauliflower, stirring frequently until softened, approximately 8 minutes.

Add the curry powder, garam masala, turmeric, and chili powder and cook until fragrant, approximately 1 minute.

Add the vegetable broth and bring to a boil.

Add the washed long grain white rice to the pot, reduce heat to low, cover, and cook for 15 - 20 minutes or until rice is cooked through and broth is absorbed.

Turn off the heat and stir in fresh cilantro.

Serve Biryani and enjoy!
