Beef Stew

Ingredients
- 800 grams of lean beef chuckcubed
- 2 tablespoons of oil
- 2 large carrotspeeled and chopped
- 2 celery stalkschopped
- 2 onionspeeled and chopped
- 2 cloves of garlicfinely chopped
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of pepper
- 4 cups of low-sodium beef stock
- 2 tablespoons of tomato paste
- 2 medium potatoespeeled and cubed
Directions
- In a large pot over high heatadd oil.
- Once the oil is hotadd the beef cubes in a single layer. (#DadJokeAlert 🤣 It’s time to add the beef - stop beefin’ around! 🤣 )
- Cook the beef until all sides are lightly browned.
- Remove the beef from the pan and set aside.
- Reduce the heat to medium-low and add the carrotsceleryonionsgarlicthymeand pepper.
- Cook the vegetables until they are softenedabout 8-10 minutes. (#KidJokeAlert 🤣 What did the carrot say to the other carrot? It’s nice to “see” you! 🤣)
- Add the beef stock and tomato paste to the pot and stir until the tomato paste is dissolved.
- Return the beef cubes to the pot.
- Bring the stew to a boil.
- Reduce the heat and simmer the stew for 45 minutes to an houror until the beef is tender.
- Add the potatoes and continue to simmer for another 15 minutes.
- Serve the stew hot with a sprinkle of chopped parsley (optional).
