Ingredients
- 500g minced beef
- 1 large bell pepperdiced
- 1 oniondiced
- 1 cup cooked white rice
- 4 tablespoons tomato puree
- 2 tablespoons olive oil
- 2 tablespoons chili powder
- 1 teaspoon garlic powder
- 6-8 small flour tortillas
- Optional garnishes: Cilantrosour cream or Greek yogurtcheesehot sauce
Directions
- Heat the olive oil in a large frying pan over medium-high heat.
- Add the minced beef and break it up with a wooden spoon.
- Nowadd the onions and bell peppers and stir.
- Once the beef is cooked throughadd the tomato pureechili powderand garlic powder. Stir together until the the vegetables are coated with the spices.
- Add the cooked white rice and stir until everything is evenly distributed.
- Reduce the heat to low and let simmer for 8-10 minutes.
- Meanwhilewarm up the flour tortillas in a separate skillet on low heat.
