Ingredients
- 210 g pearl barley, washed
- 1 liter vegetable stock, lukewarm
- 2 tablespoons olive oil
- 1 red onion, peeled and finely chopped
- 2 garlic cloves, peeled and minced
- ½ teaspoon ground black pepper
- A handful of fresh parsley leaves, chopped (to garnish optional)
Directions

In a large pot, heat the olive oil over medium heat. Add the chopped red onion and garlic, and cook them for 5 minutes until the onion becomes translucent.

Next, add the pearl barley and season with ground pepper. Stir everything together and cook for an extra minute.

Now, slowly pour in the lukewarm vegetable stock, one ladle at a time, stirring constantly. Make sure to keep the pot at a consistent simmer, and keep adding more ladles of vegetable stock one by one until the pearl barley is cooked through and the risotto is creamy. This should take around 10-15 minutes.

Once the risotto is cooked, turn off the heat and serve with a sprinkle of chopped fresh parsley (optional).
