Aloo Baingan

Ingredients
- 3 Medium Size Aubergines (around 400g)
- 2 Potatoes (around 250g)
- 1 Onion (around 125g)
- 2 Medium Size Tomatoes (around 200g)
- 1 Tbsp Ginger-Garlic Paste
- 1 Tsp Ground Turmeric
- 2 Tsp Coriander Powder
- 2 Tsp Garam Masala
- 2 Tbsp Ghee or Oil
- Fresh Coriander for Garnish
Directions
- Heat the ghee or oil in a large pan over a medium-high heat.
- Peel and dice the potatoes into 1cm chunks. Add them to the pan to cook for 8-10 mins until golden and crispy.
- While the potatoes are cooking, cut the aubergine into 1cm disks, discarding the stalks.
- Finely dice the onion and add to the pan along with the ginger-garlic paste, turmeric, coriander powder and garam masala. Cook for 5 minutes, stirring occasionally, until the onion is softened and the spices are fragrant.
- Add the diced aubergines and finely diced tomatoes and cook for a further 5 minutes until the vegetables are softened and the flavours have blended together.
- Reduce the heat and add a handful of fresh coriander, stirring everything together to combine.
- Simmer for 15-20 minutes, stirring occasionally, until the vegetables are cooked through and the sauce has thickened.
- Garnish with extra fresh coriander and serve.
