Baked Ricotta and Spinach Lasagne

A delicious and healthy Italian main dish suitable even for toddlers!
Ingredients
- 500g of lasagne noodles
- 500g Ricotta cheese
- 250g frozen spinach
- 200g diced onion
- 200g grated mozzarella cheese
- 2 tablespoons of olive oil
- 2 tablespoons of parsley
- Pepper
Directions
- Preheat the oven to 200°C.
- Begin by thawing the frozen spinach by microwaving it for 4 minutes or until it is soft. (Joke: and if it doesn’t thawyou can call it ‘freeze-dried spinach’!)
- In a large potbring 5L of water to a boilthen reduce to medium-low and add lasagne noodles. Cook for 8 minutes until al dentethen drain and set aside. (Joke: no need to explain why two noodles are better than one - it would be a real ‘past-a-time’ telling you!)
- In a separate panheat the olive oil over a medium heat and add the diced onions. Cook until the onions are translucentstirring regularly.
- Add the cooked spinach to the onions and mix together.
- In a large bowlcombine the ricotta cheese with the spinach and onion mixture.
- Grease a large baking dish with a teaspoon of olive oil.
- Layer the lasagne noodles alternately with the cheese and spinach mixture.
- Top with grated mozzarella and sprinkle with pepper.
- Place in the oven for 30 minutes or until the cheese is melted and golden.
- Sprinkle with parsley and let cool for 10 minutes before serving.
- Enjoy! (Joke: It’s easy to see why everyone loves this dish - it’s as cheesy as a cheesy joke!)
