Ingredients
- 2 aubergines (eggplants), sliced into 1 cm cubes
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1⁄4 teaspoon chilli powder
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons chopped coriander (cilantro)
- 2 tablespoons chopped mint
- Optional: 2 tablespoons ghee (clarified butter)
Directions
- Preheat the oven to 200 degrees Celsius (400°F).
- Spread the cubed aubergine evenly on a baking sheet.
- Bake for 25 minutes until the aubergine is tender.
- Meanwhile, heat the oil in a large skillet over medium heat.
- Add the cumin and mustard seeds and cook until fragrant, about 1 minute.
- Add the coriander, garam masala, chilli powder, and onion. Cook until the onion is soft, about 5 minutes.
- Add the garlic and cook for an additional minute.
- Add the roasted aubergine and stir to combine.
- Lower the heat and simmer for 8-10 minutes until the mixture is slightly dry.
- Turn off the heat and fold in the chopped coriander and mint.
- If desired, add some ghee and stir to combine.
- Serve hot with chapati or rice and a side of yogurt.
