Chili Paneer

Ingredients
- 1 large onion (diced)
- 2 tablespoons of olive oil
- 500g paneer (diced)
- 1 red pepper (diced)
- 2 cloves of garlic (minced)
- 2 teaspoons of chili powder
- 1 teaspoon of ground cumin
- 2 teaspoons of garam masala
- 1 teaspoon of ground ginger
- 1/2 teaspoon of ground turmeric
- 1/4 teaspoon of ground cinnamon
- 2 tablespoons of tomato puree
- 400ml of water
- 2 teaspoons of cornflour (dissolved in 2 tablespoons of water)
- 2 tablespoons of freshly chopped coriander (cilantro)
- Salt and pepper to taste
Directions
- Heat the olive oil in a large saucepan over medium heat
- Add in the diced onions and cook until softened, about 5 minutes
- Add in the diced paneer, red pepper, and garlic and cook for another 5 minutes
- Add in the chili powder, cumin, garam masala, ginger, turmeric, and cinnamon and cook for one minute, stirring constantly
- Add in the tomato puree and water and bring the mixture to boil
- Lower the heat and simmer for 30 minutes
- Add in the cornflour and water mixture and stir until thickened
- Taste and adjust salt and pepper
- Stir in the freshly chopped coriander
