Ingredients
- 1 can (540 mL/18.69 Oz) of Cannellini Beans
- 1/2 cup (118 mL/4 Oz) of pitted black olives
- 1/4 cup (59 mL/2 Oz) of cooked pancetta or bacon
- 2 tablespoons (30 mL/1 Oz) of olive oil
- 2 cloves of minced garlic
- 1 teaspoon (5 mL/0.17 Oz) of Italian Seasoning
- 2 teaspoons (10 mL/0.34 Oz) of minced oregano
- 2 tablespoons (30 mL/1 Oz) of minced parsley
- 1 vegetable stock cube
- 1.5L/50.7 Oz of water
- 2 tablespoons (30 mL/1 Oz) of grated Parmesan cheese, per serving
Directions
- In a large pot, heat up the olive oil on low heat for about 1 minute.
- Add the minced garlic and stir for a few seconds until garlic is fragrant.
- Add the cooked pancetta, black olives and Italian seasoning, oregano, and parsley to the pot and stir.
- Add the can of beans to the pot and stir until everything is mixed together.
- Dissolve the stock cube in 1.5L/50.7 Oz of very hot water and slowly pour it into the pot.
- Increase heat to medium and bring the mixture to a boil.
- Reduce heat to low and let simmer for about 40 minutes.
- Serving suggestion: Top each bowl of Zuppa di Fagioli with two tablespoons (30 mL/1 Oz) of grated Parmesan cheese and a few leaves of minced parsley.
Helpful hint: If the soup is too thick, add more water to the pot until you reach your desired consistency.
