Ingredients
- 1 can chickpeas (400g), rinsed and drained
- 1/2 cup diced tomatoes (125g)
- 1 red onion (100g), diced
- 2 cloves garlic, minced (4g)
- 1 tablespoon ground cumin (12g)
- 1 tablespoon ground coriander (10g)
- 1/2 teaspoon ground ginger (2g)
- 1/4 teaspoon ground turmeric (0.8g)
- 1/4 teaspoon ground black pepper (0.8g)
- 1 teaspoon chopped fresh cilantro leaves (2g), plus extra for garnish
- 2 tablespoons olive oil (25g)
- 2 tablespoons lemon juice (30g)
Directions
- In a medium-sized pot, heat olive oil over medium-high heat.
- Once the oil is hot, add in the onion and garlic. Cook for about 3 minutes, stirring occasionally, until the vegetables start to soften and become fragrant.
- Add in the diced tomatoes, along with the cumin, coriander, ginger, turmeric, and black pepper. Cook for another 3-4 minutes, stirring occasionally, until the tomatoes are softened.
- Add in the chickpeas and stir to combine.
- Add in the lemon juice and cilantro leaves and stir to combine.
- Reduce heat to low and cover the pot. Simmer for about 15-20 minutes, stirring occasionally, until the chickpeas are soft and the flavors are well blended.
- Serve hot, garnished with extra cilantro leaves, if desired.
