Sev Usal

Ingredients
- 65g Tur Dal
- 2 teaspoon Oil
- 1 teaspoon Mustard Seeds
- A pinch of asafoetida
- 1 teaspoon Cumin Seeds
- 1 teaspoon Split Chickpea (Chana Dal)
- 2 teaspoon Coriander Seeds (roasted and ground)
- 4-6 Green Chillies, finely chopped
- 1 Onion, finely chopped
- 3 tablespoons Chopped Coriander
- ½ teaspoon Turmeric
- 350g Sev
- Salt to taste
Directions
Step 1: In a bowl, rinse the tur dal and soak in lukewarm water for 10 minutes.
Step 2: Heat the oil in a pressure cooker over medium heat. Add the mustard seeds, and allow them to sputter. Then add the asafoetida, cumin seeds and chana dal.
Step 3: Once the dal is slightly browned, add the chopped onion and green chillies. Sauté till the onions are slightly golden brown.
Step 4: Add the soaked dal along with the coriander powder, turmeric and salt to taste. Add 2 cups of water and close the lid of the pressure cooker and let it cook for 3 whistles.
Step 5: Once the pressure is released, open the lid and mash the dal slightly.
Step 6: Add the sev and mix well. Let it cook for 5 minutes.
Step 7: Serve the Sev Usal hot, garnished with chopped coriander.
