Ingredients
- 500g chicken thighs, boneless and skinless
- 1 onion, sliced
- 2 carrots, sliced
- 1 leek, sliced
- 1/2 napa cabbage, chopped
- 200g shiitake mushrooms, sliced
- 4 cups chicken broth
- 2 cloves of garlic, minced
- 1 thumb-sized piece of ginger, grated
- 1 tablespoon soy sauce
- 1 tablespoon sake
- 1 tablespoon mirin
- 1 tablespoon cornstarch
- 2 green onions, chopped
Directions
- Start by preparing all your ingredients. Cut the chicken thighs into bite-sized pieces, slice the onion, carrots, leek, and shiitake mushrooms, chop the napa cabbage, mince the garlic, and grate the ginger.
- In a large pot, combine the chicken broth, garlic, ginger, soy sauce, sake, and mirin. Bring it to a boil over medium heat.
- Add the chicken thighs to the pot and let them cook for about 5 minutes.
- Next, add the sliced vegetables (onion, carrots, leek, napa cabbage, and shiitake mushrooms) to the pot. Let everything simmer for another 10-15 minutes until the vegetables are tender and the chicken is cooked through.
- In a small bowl, mix the cornstarch with a bit of water to create a slurry. Slowly pour the slurry into the pot while stirring constantly to thicken the broth.
- Once the broth has thickened, sprinkle the chopped green onions on top and give it a good stir.
- Serve the Motsunabe hot in individual bowls and enjoy with your family!
