Ingredients
- 300g Medium Sized Udon Noodles
- 2 tablespoons olive oil
- 2 cloves garlic, finely chopped
- 1 tablespoon ginger, finely chopped
- ½ medium onion, finely chopped
- 1 red bell pepper, julienned
- 260g green beans
- 125g cooked chicken (or vegetables), chopped
- 2 tablespoons soy sauce
- 2 tablespoons mirin
- 1 teaspoon honey
- 2 tablespoons sesame oil
Directions

Bring a pot of water to boil and add the noodles. Cook noodles for 5-7 minutes and drain them in a colander.

Heat olive oil in a large non-stick skillet over medium-high heat and add garlic, ginger and onion.

Cook for 2-3 minutes, stirring occasionally.

Add bell pepper, green beans and chicken (or vegetables) and cook stirring often, for another 3-5 minutes.

Add cooked noodles to the vegetable mixture and mix well.

In a small bowl, mix together the soy sauce, mirin, honey and sesame oil.

Pour the sauce over the noodle mixture and cook, stirring often, for 3-5 minutes.

Serve Yaki Soba hot and enjoy!
