Ingredients
- 150g puff pastry
- 10g butter
- 2 tablespoons olive oil
- 1 small onion, chopped
- 150g mushrooms, chopped
- 1/2 cup cooked green peas
- 1/2 cup cooked corn kernels
- 2 tablespoons all-purpose flour
- 1/2 cup vegetable stock
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon black pepper
- 2 tablespoons fresh chopped parsley
Directions

Preheat the oven to 200°C (400°F).

Place the puff pastry on a lightly floured surface and roll it out into a 25 cm (10 inch) round.

Place the pastry onto a greased baking tray and lightly score around the edge with a knife.

Bake the pastry for 20 minutes, until it is golden brown.

Heat the butter and olive oil in a large pan over medium heat.

Add the chopped onion and cook for 3 minutes, stirring occasionally.

Add the mushrooms and cook for a further 3 minutes.

Add the cooked green peas and corn kernels to the pan and cook for a further 2 minutes.

Sprinkle in the flour and stir to combine.

Slowly pour in the vegetable stock while stirring continuously.

Add the nutmeg, black pepper, and parsley and stir to combine.

Once the mixture has thickened, remove it from the heat.

Place the mixture in the centre of the pastry and fold the edges to enclose it.

Bake the vol-au-vent for 20 minutes, until the pastry is golden brown.
