Ingredients:
- 50 g of plain flour
- 3 tablespoons of unsalted butter, melted and cooled
- 2 tablespoons of marsala wine
- 30 g of dark chocolate
- 2 tablespoons of icing sugar
- 1 tablespoon of grated lemon zest
- 1 tablespoon of vanilla extract
- 600 mL of vegetable oil for deep frying

Place the flour in a bowl and add the melted butter, marsala wine, grated lemon zest and a pinch of salt. Mix until all the ingredients are combined and form a dough.

Knead the dough until it becomes soft and elastic, and then cover the bowl with clingfilm and leave to rest in the fridge for about 30 minutes.

Meanwhile, melt the dark chocolate in a heatproof bowl. Once the dough has rested, roll it out on a lightly floured surface into a thin sheet. Cut into 4 cm x 10 cm rectangles.

Place a spoonful of melted chocolate and a teaspoon of icing sugar on each rectangle and roll up into a tube. Ensure that the dough is sealed at the ends.

Heat the vegetable oil in a saucepan until it’s hot enough and fry the cannoli tubes until they are crisp and golden brown. Remove from the oil with a slotted spoon and let them drain on kitchen paper.

Sprinkle with icing sugar and the vanilla extract. Serve while still warm.
