Ingredients
- 1 cup split black lentils / urad dal
- 1 and 1/2 cups rice
- 1/4 teaspoon baking soda
- 1/2 teaspoon fenugreek seeds
- Optional: 1 small finely chopped onion
- Oil or ghee for greasing
Directions

Soak the urad dal and rice separately for at least 3-4 hours, or overnight if you can plan ahead.

Drain the soaked lentils and rice and grind it together into a smooth batter using a blender or food processor. Slowly add in 1-2 cups of water as needed.

Once the batter is ready, transfer it into a large bowl and add in the baking soda and fenugreek seeds. Mix the batter well and cover it with a wet muslin cloth, and let it sit aside for at least 8 hours or overnight.

After 8 hours, the batter should have risen considerably. Add in the finely chopped onion (optional) and give it a quick mix.

Heat a griddle over medium heat and grease it with oil or ghee. Once hot, pour in about 1/4 cup of the batter and spread it out using the back of a spoon.

Cook the uttapam on one side till it turns golden brown. Grease the top side with some oil or ghee and flip it. Cook the other side as well, until both sides are golden brown.

Transfer onto a plate and serve warm with chutney or a side dish of your choice.
Recommended Sides
Uttapam is traditionally served with a side of sambhar or coconut chutney. You can also serve it along with a simple raita or a side of curd. Each of these are mild and flavourful, and are sure to be a hit with your little one and the rest of the family!
