Ingredients
- 2 cucumbers, washed and sliced into 1 cm by 1 cm pieces
- 1 teaspoon of sea salt
- 1 tablespoon of rice vinegar
- 1 tablespoon of sugar
- 2 tablespoons of dashi
- 2 tablespoons of soy sauce
Directions
- Begin by washing the cucumbers and slicing them into 1 cm by 1 cm pieces.
- Place the cucumbers in a bowl and add the sea salt. Mix together, and let sit for 10 minutes.
- In a small pot, combine the rice vinegar, sugar, dashi, and soy sauce.
- Heat on low heat until the sugar is dissolved.
- Remove from heat and let cool for a few minutes.
- Place the cucumbers in a jar, then pour the mixture over the top.
- Make sure that the cucumbers are completely covered.
- Place a lid on the jar and let sit in the refrigerator for at least 4 hours, or overnight for best results.
- When ready to serve, drain any excess liquid, and enjoy!
