Ingredients
- 3 teaspoons olive oil
- 350g pizza dough
- 125g spinach leaves
- 125g chopped onion
- 150ml vegetable stock
- 100g mozzarella cheese
- 20g Parmesan cheese
Directions
- Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).
- In a large skillet, heat the olive oil over medium-high heat.
- Add the onion and cook for 5 minutes until softened.
- Add the spinach and cook until it wilts (about 2 minutes).
- Add the vegetable stock and simmer for 2 minutes or until most of the stock has been absorbed.
- Remove the pan from the heat and set aside.
- Roll out the pizza dough to a thickness of about 1 cm (roughly 0.4 inch).
- Transfer the dough to a greased baking tray.
- Spread the spinach mixture over the dough, leaving about 1 cm (0.4 inches) from the edge.
- Sprinkle the mozzarella cheese over the top.
- Bake in the preheated oven for 25 minutes.
- Sprinkle the Parmesan cheese over the top and bake for a further 15 minutes or until golden brown and crisp.
- Let cool for a few minutes before slicing and serving. And don’t forget to tell your kids a cheesy joke!
