Tonjiru

Ingredients
- 3 carrots
- 1 daikon radish
- 1/2 a leek
- 140g white miso paste
- 50g of pork belly
- 4 dried shiitake mushrooms
- 4 dried burdock root
- 1.2L of dashi or vegetable stock
Directions
Start by preparing the ingredients:
- Slice the daikon radish, carrots and leek into thin slices
- Soak the shiitake mushrooms and burdock root in a bowl of hot water for about 10 minutes
- Drain the mushrooms and burdock root and slice them into thin strips
- Heat some vegetable oil in a large pot on medium heat.
- Add the pork belly and stir-fry until it is cooked through
- Add the sliced vegetables (carrots, daikon radish and leek) and mushrooms and fry for another 2 minutes
- Add 1.2L of dashi or vegetable stock and the miso paste to the pot and mix well.
- Bring the soup to a boil and simmer for 25 minutes, stirring every few minutes
- Add the burdock root to the soup and simmer for an additional 10 minutes
- Taste the soup and adjust the seasoning if necessary
