Ingredients
- 2 large carrots, cut into thin matchstick (Julienne) slices
- 2 medium zucchinis, cut into thin matchstick (Julienne) slices
- 2 tablespoons olive oil
- 250g chicken breast, cut into 1 cm cubes
- 2 cloves garlic, finely minced
- 1 teaspoon smoked paprika
- 200g cup white Jasmine rice, rinsed and drained
- 500 ml of dashi, vegetable or chicken stock
- 2 tablespoons soy sauce
- 4 large eggs
- 2 tablespoons black sesame seeds
Directions
- Preheat oven to 350°F (177°C).
- On a baking sheet, mix together carrots, zucchinis, 1 tablespoon olive oil, and a pinch of salt and pepper. Roast for 10 minutes or until the vegetables are just tender.
- In a skillet, heat the remaining 1 tablespoon of olive oil over medium heat.
- Add cubed chicken and garlic to the pan, season with smoked paprika, salt, and pepper. Cook chicken until it is brown, about 7 minutes.
- In a medium saucepan, add rice and stock. Bring the mixture to a boil, and then reduce the heat to low and simmer for 10 minutes, or until the liquid has been absorbed and the rice is cooked through.
- Turn off the heat and stir in soy sauce and roasted vegetables.
- In the same skillet, fry eggs sunny-side up or over easy.
- Place the cooked rice in a bowl and top it with the sesame seeds. Add chicken and eggs to the top of the donburi and enjoy.
