Ingredients
- 24 chicken wings, fully thawed
- 2 cups soy sauce, reduced-sodium
- 2 cups mirin, a sweet sake-like cooking wine
- 1 cup sake, an alcoholic beverage from Japan, or dry white wine
- 2 cloves garlic, minced
- 1/2 inch fresh ginger, minced
- 1 teaspoon black pepper

Preheat oven to 375°F (190°C).

Place chicken wings in a single layer on a baking sheet lined with parchment paper.

In a small saucepan, whisk together the soy sauce, mirin, sake, garlic, ginger, and black pepper over low heat.

Bring the mixture to a simmer and cook until the sauce has reduced by half and is slightly thickened. This should take about 10 minutes.

Brush the sauce liberally over the wings until evenly coated.

Bake for 40 minutes, or until the sauce is caramelized and the chicken is cooked through.

Serve hot and enjoy! But watch out for chicken wing splatter - it’ll leave you with a great taste but a messy shirt!
