- 1kg Swordfish Steaks
- 2 tablespoons Olive Oil
- 250g Aubergine (Cubed)
- 150g Courgette (Cubed)
- 150g Red Pepper (Cubed)
- 1 Large Onion (Chopped)
- 150g Pitted & Halved Black Olives
- 250g Tinned Tomatoes
- 2 tablespoons Red Wine Vinegar
- 2 tablespoons Capers
- Freshly Ground Black Pepper
##Preparation

Preheat the oven to 180°C/355°F

Lay the Swordfish steaks on a large baking tray

Cover with a light layer of Olive Oil

Place in the oven for 15 minutes
5.Meanwhilein a large bowl mix together the AubergineCourgetteRed Pepper and Onion

In a separate bowl mix together the OlivesTomatoesRed Wine VinegarCapers and Black Pepper

Once the 15 minutes are upadd the vegetables and the tomato mixture over the Swordfish steaks

Place the baking tray back in the oven for 10 minutes
