- 3 Large potatoes, washed and cubed into 1-inch pieces
- 2 strips of bacon, cut into small pieces
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 teaspoon of ground cumin
- 2 tablespoons curry powder
- 1 teaspoon of turmeric
- 1 teaspoon of chili powder
- 1 teaspoon of ground cardamom
- 1 can of coconut milk
- 1 can of diced tomatoes
- 2 tablespoons of vegetable oil
- 1 tablespoon of freshly chopped cilantro
- Salt and pepper to taste

Heat the oil in a large skillet over medium-high heat. Add the bacon and cook for 5-7 minutes or until crispy.
