Ingredients
- 4 fresh salmon fillets
- 1 small onion, finely diced
- 1 bay leaf
- 2 tablespoons of white wine
- 125 mL of whipping cream
- 2 tablespoons of olive oil
- Ground pepper, to taste
- Fresh parsley, finely chopped
Directions
- Preheat your oven to 350 degrees Celsius.
- Place the salmon fillets in an oven-friendly plate.
- Place the diced onion, bay leaf, and white wine over the salmon, then cover the plate with aluminum foil.
- Place the plate in the oven and cook for 10 minutes. Once done, remove the plate from the oven and allow to cool.
- Once cool enough to handle, debone and flake the salmon into a bowl.
- In a separate bowl, mix together the whipping cream, olive oil, ground pepper, and fresh parsley.
- Add the cream mixture to the salmon and mix it until creamy and well-combined.
- Serve the rilletes de saumon in individual plates, topped with extra fresh parsley, and enjoy!
