Ricotta al Forno

Ingredients
- 600g low-fat ricotta cheese
- 45ml olive oil
- 2 cloves garlic, finely minced
- 280g fresh spinach leaves
- 1 tin (400g) Italian-style tomatoes
- 2 eggs, lightly beaten
- 30g Parmesan cheese, grated
- 1 teaspoon ground black pepper
- A pinch of nutmeg
- 40g of mozzarella cheese, grated
Directions

Preheat your oven to 180°C (350°F).

Grease a baking dish with some of the olive oil.

In a large bowl, combine the ricotta cheese, garlic, spinach, Italian-style tomatoes, eggs, Parmesan cheese, the remaining olive oil, pepper, and nutmeg. Mix everything together well.

Pour the mixture into the prepared baking dish.

Sprinkle the mozzarella cheese over the top.

Bake for about 30-35 minutes, until golden brown and bubbly.

Take the Ricotta al Forno out of the oven and let it rest for a few minutes before serving.
