Ingredients
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup carrots, grated
- 1 cup sweet corn
- 1 cup purple cabbage, shredded
- 1 cup bell peppers, diced

- 1/4 cup olive oil
Directions
- Wash all the vegetables thoroughly. Make sure to dry them well before cutting.

- Shred the purple cabbage into thin strips. It’s okay if some pieces are longer than others - it adds character!
- Dice the bell peppers into small pieces. Red, yellow, and green peppers make the salad look like a rainbow!
- In a separate small bowl, mix together the lemon juice and olive oil to make the dressing.
- Pour the dressing over the salad ingredients and toss everything together. Make sure each veggie gets a good coating of dressing.
