Poulet à la thaïlandaise

Ingredients
- 2 x 400mL (14 oz) cans of Light Coconut Milk
- 1 clove of Garlic, finely grated or pressed
- 1 teaspoon of Ground Coriander
- Grund Turmeric, freshly ground pepper and ground cumin
- 1 stalk of Lemon Grass, sliced into thin rings
- 2 Red Bird’s Eye Chilli, deseeded and sliced
- 2 Lime Leaves, freshly cut or already pre-cut
- 4 Chicken Breasts, boneless and skinless
- 8 tablespoons of Vegetable Oil, such as olive, canola or sunflower
- 1/2 cup of Water
Directions

Preheat your oven to 200°C (400°F).

In a small bowl, mix the coconut milk, garlic, coriander, turmeric, pepper, cumin and the lemon grass.

Place the chicken on a baking tray.

Pour the coconut milk mixture over the chicken and let it sit for 10 minutes.

Add the chilli, lime leaves and oil to the tray and mix well.

Place the tray in the preheated oven and bake for about 45 minutes.

Add the water to the tray and bake for a further 15 minutes, or until the chicken is cooked through.

Serve with steamed white rice or boiled potatoes on the side.
