Goya Chanpuru

Ingredients
- 200 g fried tofu
- 2 potatoes
- 1/4 of a large carrot
- 2 cloves of garlic
- 2 teaspoons of vegetable oil
- 1/4 a teaspoon of grated ginger
- 4 tablespoons of black sesame seeds
- 250 ml of dashi stock
- 6 tablespoons of soy sauce
- 2 tablespoons of rice vinegar
Directions
- Preparing the tofu: Gently press the tofu with a piece of paper towel to drain off some of the oil. Cut into 1 cm cubes and set aside
- Preparing the potatoes and carrot: Peel the potatoes and cut into 1 cm cubes. Peel and finely grate the carrot.
- Preparing the garlic: Peel and finely chop the garlic.
- Cooking the Goya Chanpuru: In a medium-sized pan, heat the oil over medium heat. Add the garlic and ginger and cook for 30 seconds. Then add the tofu and potatoes and cook, stirring occasionally, for 5 minutes.
- Adding the flavours: Add the grated carrot, black sesame seeds, dashi stock, soy sauce, and rice vinegar. Bring to a boil and then reduce the heat and simmer for 15 minutes.
