Ingredients
- 200 g all-purpose flour
- 75 g finely ground almond flour
- 1 teaspoon ground cinnamon
- 1 teaspoon freshly ground cardamom
- 2 teaspoons ground anise
- 1 ½ teaspoons ground ginger
- 1 teaspoon ground nutmeg
- ½ teaspoon baking powder
- 125 g earth balance butter alternative, softened
- 125 g brown sugar
- 1 tablespoon of vegan molasses
- 2 tablespoons of espresso, chilled
- 2 tablespoons of lemon juice
Directions
- Preheat oven to 350°F (175°C).
- In a medium bowl, mix together the flours, spices, and baking powder.
- In a large mixing bowl, cream together the earth balance and brown sugar until light and fluffy.
- Add the molasses, espresso, and lemon juice to the earth balance and sugar, and beat until combined.
- Slowly add the dry ingredients to the wet ingredients, and mix until well combined.
- Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet.
- Bake for 15 minutes or until lightly golden brown.
- Allow to cool before serving. (Dad joke: You’ll need to wait «a-dough» for these cookies to cook!)
